Bocca, the Italian fine dining restaurant at Hilton Abu Dhabi is celebrating the classic Italian dish, risotto, this month.
Bocca’s special risotto menu, which is being served until 30 June for dinner, is based on culinary influences from the Northern regions of Italy including the city of Milan.
The popular rice dishes are made by the team along with chef de cuisine Leonardo Passone, he said: “One of the reasons Bocca succeeds at maintaining the authenticity of Italian cuisine is because we use our grandmother’s recipes. Blending tradition with modern cooking techniques and carefully designing a menu with the season’s fresh produce make the options on this risotto menu irresistible.”
With prices starting from AED 65, options include the traditional Milanese risotto with saffron and herbs, citrus scented risotto with asparagus and salmon eggs, and creamy beetroot risotto with Taleggio cheese fondue.
