The Birdcage, a new vibrant rooftop lounge and bar, is set to launch in Downtown. Set three floors above the Dubai Canal, and boasting panoramic city skyline and stunning sunset views, the lively venue will bring a unique vibe to the city combining chic décor with a bold twist. Open exclusively from Tuesday to Sunday, The Birdcage will transport guests to worlds away with its line-up of the best local and international DJs, a specially curated cocktail collection and Asian and Latin American fusion menus.
Taking inspiration from an ornate Birdcage, the new venue features grand statement chandeliers, Roman style sculptures, a sleek monochrome palette and luxurious velvet furnishings. Illuminated by a bold neon pink glow, holograms of soaring birds and tropical palms adorn the space to bring a sense of the tropics to the city escape. As the night draws in, the venue transforms for after dark rendezvous with the lights dimming, the music building and the high energy continuing until late into the night.
At the helm of the concept is General Manager, musician and DJ, Nicolas Hillmann. Well versed in opening nightlife venues and restaurants, thanks to his experience with globally recognized brands both in Dubai and overseas, Nicolas will be bringing over a decade of experience in the international nightlife, bar and restaurant industry. As well as this, Nicolas will be using his personal musical experience and influences to create a unique sound for The Birdcage, his true passion project.
As an ode to the fictional character Jonathan Gold, the cocktail menu takes guests on a journey through his adventurous life in drinks. As the writer of his very own book on bartending, The Inquisitive Bartender, Andrew, the Head MixologistBar Manager and avid storyteller, curated the menu featuring classic favourites with a punch of flair and pizazz. With each cocktail comes an excerpt of Jonathan Golds Autobiography, leading guests on a journey to find out more about his tale after a luminescent bird comes to him in a dazed dream. Sip on concoctions such as 21 Years Young, Jazz and a Lot of Saz, The Lady in Pink or An Old Cuban in an Airplane whilst soaking in the sunset views or enjoying the latest tunes from the best local DJs in the city.
To perfectly compliment every cocktail, an exquisite bar bites and sharing menu of Asian and Latin American fusion food has been created by talented Chef John Kennett Lagundi. Guests can expect a mix of sweet, hot, sour and umami flavours inspired by Chef John’s native country, the Philippines, and its history of Spanish influence and the neighbouring Asian countries. The blending of these cultures results in a culinary experience which features traditional cooking techniques, open flame grilling and head-to-tail cooking. Dishes on the menu includes the likes of Chorizo Gyoza, a Raw Bar of tangy Ceviches and Tiraditos, a selection of grilled meats and seafood with Porter House Steak and Charcoal Braised Lamb Ribs all on the menu. End on a sweet note with treats such as Ej Chaja (Uruguayan Peach Tart), Burnt Ube Cheesecake and the best of chef’s selection Fiesta Platter.
Guests will be welcomed to discover the story of Jonathan Gold and experience a night in the Birdcage when the doors are unlocked from 16th August 2022.
