Ilias specialises in creating contemporary European cuisine with a Mediterranean twist. Where Ilias’ main source of inspiration comes from the creation of new dining concepts, he has played an integral role in the launch of the brand new and authentic Greek restaurant Anása, which brings simple and elegant gastronomic delights to the UAE.
During his career, Ilias has worked across eight countries around the world and has demonstrated expertise in European Michelin-starred restaurants such as L’Astrance, Texture, and Le Meurice, Ilias takes a hands-on approach and thrives in challenging environments.

Prior to joining the Conrad Dubai team, Ilias held top chef positions in a number of luxury hotels across the globe, such as Grand Hyatt Muscat, Grand Hyatt Doha, Rosewood Al Faisaliah & Al Khozama Hotel Riyadh, Amankila in Bali, and Amanzoe in Greece with Aman Resorts.
