BRICK Rooftop Kitchen & Bar has opened at Aloft Abu Dhabi Hotel.
At the new restaurant, all dishes are cooked using brick ovens operated by burning oak, cedar and olive wood. Some of the highlights of the menu are Spatchcock chicken marinated in ginger, chili, coriander and lime.
Additionally, dishes such as cedar wood salmon are served with oven-baked and caramelised lemon. Sweet treats include signature s’mores with Belgian chocolate.
“It’s imperative to build a strong brand and team when developing a unique brand like BRICK. While putting together the food and beverage selection at BRICK, the team worked relentlessly to ensure that we get the entire equation right. While we did focus on delivering a great menu offering, we also ensured we price correctly so that guests need not to look for a discount when dining at BRICK,” says Richard Collins, area general manager at Aloft Abu Dhabi.
“When we created Brick, we wanted to create a bar and restaurant that was genuinely unique, approachable and affordable yet sophisticated and creative. More than anything, we wanted a place that feels like the neighborhood revolves around it – not another boring hotel bar and restaurant. From the theme to the team, from the views to the décor and most importantly the food, this is a fresh concept to the Abu Dhabi scene.”
