Fairmont The Palm has introduced a range of new activities, led by recently-appointed chef Romain Van Durmen, in the Chef’s Palette cooking studio.

The Chef's Palette

Accommodating groups of up to 12 people, the studio now offers masterclasses, a chef’s table experiences and a Friday brunch.

Chef Durmen commented: “We have created a series of cooking classes that really break the tradition and expectations in the region. We cater to all ages and skill-sets, and now with our added chef’s table dinners and brunch experiences, we are really creating a culinary destination that can be enjoyable and tasty for everyone. We want to push boundaries, so expect visually exciting and memorable experiences, with dishes ranging from pasta to fois gras that are perfect for any occasion.”

A weekly programme of cooking classes are available, priced from AED 195 per person.

Afternoon classes offer one-on-one tuition on simple recipes, such as Belgian waffles and nitro ice cream, sushi maki rolls and pasta carbonara. The lesson includes a complimentary lunch buffet in Flow Kitchen.

Master classes are a fully interactive hands-on evening culinary experience priced from AED345 per person based on a minimum of six people.

Available every evening from 7.30pm, guests can choose a set menu or signature themed class and will learn to make appetisers and main courses, with dessert being served up by the pastry chef. There is also an option for full grape pairing.

Priced from AED445 per person, the chef’s table experience is a private dinner prepared by chef Durmen, with wine pairing and whisky pairing options. It is available every evening from 7.30pm and prices are based on a minimum of six people.

The Grand Connoisseur dining experience offers the best ingredients and grape, with items such as  Kumato oysters, foie gras, langoustines, Amstur empress caviar, lobster and wagyu beef, paired with fine beverages.

The eight-course menu is priced at AED3,500 per person including beverages, based on a minimum booking of two people.

The Chef’s Palette VIP Brunch Experience begins with the Flow Kitchen brunch followed by a Chef’s Palette private, interactive brunch experience. A dedicated bartender and chef provide guests with specialty cocktails and signature dishes.

The brunch is available every Friday from 12 – 4pm.  Bookings are available for tables of 8-12 people, priced at AED595 per person including alcohol.

The Chefs Palette @ Home experience, is a private, restaurant-style experience created at a guest’s home for a minimum of six people (available at Fairmont Residences only).

The menu and pricing are customised by the chef.
